Krispy Kreme's hot donut began as a by-product of exactly this. Vernon Rudolph's Winston-Salem shop sold wholesale to grocery stores, and production ran from midnight to four in the morning; he sold hot donuts to whoever turned up during it. The window came later; the schedule came first.

A raised dough sets the clock. It has to be mixed, risen, cut, proofed and fried before opening, and none of those steps can be hurried by much.
