Proofing is the rest in which yeast ferments the dough and makes the gas that lifts it. Blooming is a different thing with the same word: suspending dry yeast in warm water to hydrate it, and to see whether it is still alive.
The raise is why the raised donut lost ground when shops automated in the 1920s. Yeast needs time and a warm room, and the dough is harder to handle; baking soda was predictable and easy to build a machine around, so most bakers went to cake.
