A Polish-American bakery selling pączki — rich filled donuts, powidła or rose-petal jam inside, powdered or glazed — beside rye bread and coffee cake. One day a year it is the only thing anyone is there for.

Pączki are medieval in Poland and were improved, Jędrzej Kitowicz wrote, by French cooks at the court of Augustus III until they came out lighter. The dough is richer than a jelly donut's — eggs, fat, sugar, yeast, sometimes milk — and carries a spoonful of rectified spirit, which evaporates in the fryer and keeps the oil out.
The pale belt around the middle is read as proof the oil was fresh. In Chicago, Milwaukee, Detroit and Windsor the tradition sits with the Polish communities, and Fat Tuesday is Paczki Day.
