Donuts belonged to autumn before anyone sold them at an orchard: the slaughter season produced the surplus fat you fried in. Cider donuts themselves go back at least to the late nineteenth century — a 1901 piece in The Buffalo Enquirer has them at Halloween parties.
What made them a roadside business was Adolph Levitt's 1921 machine, which fried rings of batter methodically and in public. Cider-selling farm stands took it up quickly. The Doughnut Corporation of America may have sold the first commercial cider donut, a "sweet cider doughnut", in 1951.
The season runs with the apples: September into November or December.
How it is done Tradition
One depositor over one kettle, in view of the queue. Cider is reduced first, or the batter carries too much water. Donuts go into cinnamon sugar and then into a bag that goes translucent on the drive home.
