Bon Appétit's Alex Delaney ranked three Western New York wing rooms on camera in 2018 after working through twelve. Gabriel's Gate came first, Elmo's second, Mammoser's third — a village tavern in the same sentence as two Buffalo rooms.

What Visit Buffalo's trail names is the pepper count: a homemade sauce "with four different varieties of pepper," delivering "a slow burn and extra kick." Slow burn is the argument. Buffalo's cayenne-and-butter sauce hits at the front of the mouth and leaves; a four-pepper sauce arrives late and stays, which is a different eating experience sold under the same word, hot.

The house describes itself as the room where "customers have been enjoying our famous wings for decades" and as "the friendly neighborhood bar that truly does know our customers by name." Listing sites date the tavern to 1947 and the building to a stable a century before that; this project could not read a page that states either, so both stay out of the record.
