The Shelby, Cleveland County, pork-shoulder house of the Bridges family, begun in 1946 by Red Bridges, an Army cook home from the war, and his wife Lyttle, and run by their daughter Debbie Bridges-Webb with her children Natalie Ramsey, who runs the front, and Chase Webb, who tends the pits overnight. Shoulders cook seven to eight hours a side over hickory and oak — no gas, no electric, the family told WBTV in 2026 — and the recipes are the ones the Bridges started with. The lodge on U.S. 74, across from the Cleveland Mall, marked eighty years in June 2026.

Red Bridges came home from the Army, where he had cooked, and in 1946 began selling barbecue sandwiches from a livestock yard, the family told the Southern Foodways Alliance; the restaurant's own history calls that first venture Dedmond's Barbecue. In 1949 it became Red Bridges Barbecue Lodge, and the lodge building dates from 1953. Red died in 1966 and Lyttle ran the business after him — 'probably the first female barbecue entrepreneur in North Carolina,' her grandchildren said in 2011. Debbie, their daughter, owns it now; Natalie Ramsey and Chase Webb told the Alliance's Rien Fertel that nothing would change, 'because you don't find pit-cooked barbecue hardly anymore.' WBTV, marking the eightieth year in June 2026, found server Wanda Montgomery in her 44th year and the family planning to put the sauce in grocery stores.

Pork shoulders smoke seven to eight hours on each side over hickory and oak coals, Chase Webb at the pits through the night. The barbecue is chopped or sliced and dressed with the family's sauce, unchanged since 1946 by the family's account; the plate is the Piedmont plate, red slaw and hushpuppies beside the meat.
