The pâte à choux method — butter, eggs, milk or water, sugar, flour, salt, cooked and beaten — is the style French immigrants brought to New Orleans in the 1700s. Beignets are also made from yeast-leavened batters and from rice flour, and the word covers all of them. In Canadian French, beigne or beignet simply means doughnut. In the former French colonies of West Africa a beignet is a ball of fried dough, sometimes millet flour in Senegal.

The New Orleans beignet arrives at a table three to an order with a snowbank of powdered sugar and coffee cut with chicory beside it.
