French immigrants brought the pâte à choux method to New Orleans in the 1700s, and the square beignet is what it became there. Beignets are also made from yeast-leavened batters and from rice flour; the word covers all of them, and in Canadian French it simply means doughnut.

The coffee is the other half. The French brought coffee to the Gulf Coast around 1700, and Civil War shortages taught New Orleans to stretch it with chicory, which stayed after the shortage went.
