The Decatur, Alabama pit where white barbecue sauce was invented: mayonnaise, vinegar and black pepper, made for smoked chicken. Bob Gibson started it in 1925; four generations of his family have run it since, and its competition team won first place for smoked wings at Memphis in May in 2021.

Bob Gibson (1888-1972) worked for the L&N Railroad and barbecued at weekends over a dugout pit in his backyard off Danville Road, on an oak plank nailed to a sycamore. The house quotes the line that turned it into a business, from Roslyn Mitchell: "Your future is not in the railroad, but in Bar-B-Q." He opened a restaurant on Moulton Road with his brother-in-law Sam Woodall called Gib-All's, then continued under his own name.

The white sauce was his. He split and seasoned chickens, smoked them about three hours over hickory, and dunked them in mayonnaise, vinegar and black pepper. It began as a chicken sauce and stayed one.

In 1952 Gibson handed the operation to his daughter Catherine McLemore (1919-2004) for half ownership and opened on Sixth Avenue. After his death five grandchildren and their spouses ran it, led by Don McLemore (1941-2026). Chris Lilly, from Florence, joined in 1992 on marrying Amy McLemore, Gibson's great-granddaughter, and runs the competition team. Don McLemore recorded an oral history with the Southern Foodways Alliance on 15 November 2006, for the Alabama BBQ leg of the Southern BBQ Trail: the 1925 backyard start, the meringue pies, a 1988 fire that took the original building, and a rebuild next door that kept the old neon.

The sources disagree on small things. The Encyclopedia of Alabama dates Gibson's death to 1972 and a Sixth Avenue building to 1987; the oral history says McLemore joined in 1972, a year before Gibson died, and puts the fire in 1988. The 1952 Sixth Avenue opening is in both.

At Memphis in May the family has taken five grand championships — 2000, 2003, 2011, 2014 and 2017 — twelve category wins in pork shoulder, and, in 2021, first place in smoked wings.

Split the bird, season it, smoke it about three hours over hickory, then dunk it in the white sauce — mayonnaise, apple cider vinegar, lemon juice, black pepper and salt, thin enough to take a whole split chicken. The sauce goes on after the smoke and was made for chicken only.
