A Memphis barbecue house started in 2002 by two competition cooks, Craig Blondis and Roger Sapp, on Central Avenue. Smoked hot wings come off the same pit as the ribs, whole, in six finishes: wet, naked, jerked, dry spice, honey gold or sweet heat. The house line is "Smoke is Our Sauce."

Blondis and Sapp met on the barbecue circuit in the mid-1980s and competed at Memphis in May's World Championship Barbecue Cooking Contest before they went into business together. The pit at the first Central BBQ, on Central Avenue, was fired in 2002.
The method the house publishes: premium meats rubbed with a dry spice combination, marinated twenty-four hours, then smoked low and slow over hickory and pecan. In their words, "We live in the hardwood capital of the world and use hickory and pecan woods, along with our intricate dry rub and a whole lot of patience."
Blondis recorded an oral history with the Southern Foodways Alliance on 13 July 2008, interviewed by Rien T. Fertel for the Tennessee BBQ project. He described bringing competition-style barbecue to a Memphis storefront, a sauce board that includes vinegar and mustard styles uncommon in the city, and a kitchen run light: "if you can control consistency and quality, you will have repeat customers."
Inference — the wing here is a barbecue-counter wing, not a fryer wing. Where a Buffalo bar fries and then tosses, this pit smokes and then decides — and one of the six choices, naked, is to decide nothing.
