The breakfast burrito is New Mexican before it is anything else. Tia Sophia's, a diner in Santa Fe, claims the first use of the term on a menu in 1975, though a tortilla rolled around eggs, bacon, potatoes and cheese was on New Mexican tables well before that. The fast-food chains followed — McDonald's in the late 1980s, Sonic, Hardee's and Carl's Jr. through the 1990s, Taco Bell in 2014.
The donut shop sits in the same slot as those chains: open early, one window, a driver in a truck. Inference — a counter already selling coffee at five in the morning has a griddle's worth of spare capacity and a customer who wants something salty, which is the same argument the California shops make about egg rolls.
