Order a kolache in Texas and you will probably get sausage in it, which a Czech Texan will tell you is a klobasnek.
A donut counter that also sells kolaches — and, in Texas, mostly klobasniky: sausage, ham, egg, cheese or jalapeño wrapped in sweet kolache dough. Sold from gas stations, strip-mall shops and dedicated kolache bakeries across the state, well outside the Czech settlement belt.

Two different pastries carry one name here. A traditional kolache came with Moravian immigrants: sweet dough with a fruit or cheese filling in a well on top. The klobasnek was invented by Czechs who had already settled in Texas — sausage wrapped in that same dough. Texans not of Czech descent call both kolaches; Texans of Czech descent call the savoury ones klobasniky and mean it.
The town of West, in McLennan County, has one of the largest concentrations of Czech Texans in the state and was designated "Home of the Official Kolache of the Texas Legislature" in 1997. Westfest keeps the day.
The donut shop picked it up because it sells at the same hour to the same driver. Fillings widened from klobása to hot dogs, ham and egg, cheese and peppers, and in some shops boudin, the Cajun pork-and-rice sausage.
