Sausage — klobása, traditionally — wrapped in kolache dough and baked. Ham, egg, cheese, jalapeño and hot dog are all standard now, and in some Texas shops boudin, the Cajun pork-and-rice sausage.

Unlike the kolache, which came with Moravian immigrants, the klobasnek was invented by Czechs who had already settled in Texas. Texans of Czech ancestry call the savoury doughs klobasniky; Texans who are not call them kolaches, and that is what the sign says. They are sold everywhere from gas stations to dedicated kolache shops, well outside the Czech counties.
